Turkey Charcuterie Board: 15 Easy Ideas for Thanksgiving

A turkey charcuterie board (some people call it a "turkuterie" board) is a regular meat-and-cheese board arranged so it looks like a turkey: a round body in the middle, a little face, and fanned rows of food as the tail feathers. It's the board guests take pictures of before anyone eats, and it's easier to build than it looks.

Below are 15 turkey boards you can make at home, from the classic pear-head turkey to a cranberry brie turkey and a caramel apple turkey for dessert. Each one has a shopping list, step-by-step instructions, and where to find everything at stores like Walmart, Target, Aldi, Costco and Publix.

How every turkey board comes together

All 15 boards use the same basic layout, so it helps to know it once:

  1. Tail feathers first. Lay food in overlapping curved bands across the top of the board, like a rainbow. Start with the outer band and work inward.
  2. Body next. Place something round and solid at the bottom center: a pear, a cheese ball, a small bowl of dip or a wheel of brie.
  3. Face last. Add two candy eyes, a small triangle "beak" and a red "wattle" (the red flap under a turkey's beak).
  4. Fill every gap around the turkey with fruit, nuts, small bowls and fresh herbs so the board looks full.

Turkey face cheat sheet: a Bosc pear makes a great head because it's already brown and turkey-shaped. Stick on candy eyes with a tiny dab of cream cheese, use a small triangle of cheddar or the tip of a baby carrot for the beak, and a thin strip of red bell pepper for the wattle. Candy eyes are usually in the baking aisle near the sprinkles.

1. Classic Meat-and-Cheese Turkey Board

The one most people picture: salami, cheese and crackers fanned into feathers around a pear head, with figs, apricots and pecans filling in around it. Serves 10 to 12 as an appetizer.

How to make it

  1. On a large board, fan crackers, cheddar, folded salami, pepper jack and pepperoni in overlapping bands across the top, like a tail.
  2. Lay the pear on its side at the bottom center of the fan, narrow end up, and add the face.
  3. Set the fig jam ramekin near the turkey and add the halved figs around it.
  4. Fill every gap with grapes, dried apricots and pecans, then tuck in rosemary and sage.
  5. Make-ahead: build everything except the crackers up to 4 hours ahead, cover and refrigerate; add crackers right before serving.

Where to get it

Deli, cheese case and cracker aisle at Walmart, Aldi, Publix and Target. Fresh figs show up in the produce section into early fall; if they're gone, use dried figs. Costco's large packs of salami, cheese and pecans are a good buy for a crowd.

In season: pears are a fall fruit, so they're easy to find and well priced around Thanksgiving.

2. Cheese Ball Turkey Board

3. Cranberry Brie Turkey Board

How to make it

  1. Spoon the cranberry sauce over the brie and set it at the lower center of the board.
  2. Press the candy eyes and the cheddar beak into the cranberry topping, with the pepper-strip wattle hanging over the edge.
  3. Fan butter crackers, pear slices, loose ribbons of prosciutto and water crackers in bands behind it.
  4. Add the pomegranate half, figs, grapes and candied pecans, scatter a few pomegranate seeds, and tuck in rosemary.
  5. Optional: bake the brie at 350°F for about 10 minutes first, and let it cool 5 minutes before adding the face.

Brie and prosciutto are in the specialty cheese and deli cases; canned whole-berry cranberry sauce is in the canned fruit aisle. Pomegranates are in produce from fall into winter.

Turkey charcuterie board FAQ

Can you put turkey on a charcuterie board?

Yes. Sliced deli turkey or leftover roast turkey works well. Roll or fold the slices and treat them like salami in the feather rows, and keep the board chilled until serving.

How far ahead can I make a turkey charcuterie board?

You can build most of it up to 4 hours ahead. Cover it tightly and refrigerate, then add crackers, cut apples and anything crunchy right before serving.

How long can a charcuterie board sit out?

The USDA's food-safety rule is that perishable food like meat and cheese shouldn't sit at room temperature for more than 2 hours, or 1 hour if it's above 90°F (USDA FSIS). For a long party, put out half the board and refill it from the fridge.

What do you use for the turkey's head?
